Blueberry compote

Pan toasted seed bread slices with feta
  • Seed bread boule
  • Feta crumbles
  • Unsalted butter
Place the buttered bread in a cast iron skillet covered with crumbled feta with lid on skillet until golden. 

Blueberry, walnut compote
  • Pint fresh blueberries
  • 1/2 walnuts, chop fine
  • 1/8 c. honey
  • 1/8 c. fresh mint, chopped fine
  • 2 tbsp. balsamic vinegar
  • 1 tsp. sea salt
Mix all ingredients by hand in mixing bowl. place in 5-6" cast iron skillet on medium heat until bubbling, stirring occasionally (about 3 minutes). 

Plate toast and spoon compote over toast as desired. Enjoy!
